Fruity Goat Cheese Pizza
Ingredients:
- 1 cup green or red seedless grapes, halved
- ½ tablespoon finely chopped rosemary
- 1 ½ tablespoons extra-virgin olive oil
- 6 – 8 oz fresh pizza dough
- 4 ounces soft goat cheese
Preparation
- Preheat oven to 450°F.
- Toss grapes, goat cheese and rosemary in olive oil; set aside.
- Roll the dough into a 10 - 12 inch round.
- Place the dough round, in the oven until cooked through; it takes about 6 minutes.
- Spread the grapes, goat cheese and olive oil mix on the dough round.
- Heat until the cheese begins to melt; about 5 minutes.
- Remove from the oven, let it cool a bit and serve.

Chocolate/Nuts Dipped Cranberry Cookies
Ingredients:
- 1 cup canola or sunflower oil
- 1 cup brown sugar
- 1 teaspoon alcohol-free vanilla
- 1 large egg
- 2 cups unbleached flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 2 cups halal Ocean Spray® dried cranberries
- 1 ¼ cups chopped walnuts
- 1 1/3 cups semi-sweet chocolate
Directions:
- Preheat oven to 350°F.
- Grease cookie sheets.
- Whip oil and sugar together in a mixing bowl until light and fluffy.
- Add alcohol-free vanilla and egg; mix well.
- Combine flour, baking powder and salt in a separate mixing bowl and add to the oil/sugar mixture,
beat until soft dough is formed. Stir cranberries into the dough.
- Place rounded teaspoonfuls of dough onto cookie sheets.
- Bake for 10 minutes or until golden brown.
- Transfer cookies to a wire rack to cool.
- Dip half of each cookie into melted chocolate and then in nuts.
- Allow chocolate to dry completely, before serving.
This recipe makes about 40 chocolate-dipped nutty, cranberry cookies.
